I have to admit it feels wrong to write about leftover turkey now that the weekend is officially over. Everyone gets all excited about what to do with leftovers for about 2 days, but after that it just gets annoying. Then again, I've heard that wearing white after Labor Day is no longer verboten, so maybe writing about leftover turkey 5 days post-holiday still falls within the realm of reasonableness.
With that in mind, here's a turkey tortilla soup, made both with a rich turkey stock (the base for my Thanksgiving gravy) and a whole lot of turkey broth I cooked up after the feast. If you did the same -- you know, threw the picked-over carcass in a big pot with a few carrots, celery nubs, what have you -- you can make this soup.
And now we come to a crossroads moment: I'm weighing the effort required to type out the recipe against the likelihood that any of you, honestly, is going to make this. I mean, will there be a revolt if I just say say this: find a tortilla soup recipe online, swap out your leftover turkey for the chicken and your turkey stock/broth for the chicken stock, and garnish the hell out of it? (You should see how much cheddar cheese my kids put into their bowls.) (And remember to ladle out their soup before adding the chile, unless you want to call the fire department to extinguish their exploding heads.)
